Dice roughly 3 medium sized tomatoes
Dice one small white onion
Dice 2 to 4 Jalapeno or Serrano peppers
Finely chop one-quarter to one-half bunch of fresh cilantro
Add 1 Tbsp minced garlic (we keep a jar of it in the fridge)
Add 1 tsp of salt
Squeeze the juice from one lime over the top
Mix it all together and let set for one hour for best results
I don’t measure anything – which means the exact mix is never the same, yet it always tastes pretty good – so the whole recipe is pretty forgiving. The two MUSTS are the fresh cilantro and fresh lime juice.
If you like avocado – best to add right as you are serving it (it turns to mush if you mix with salsa and let set in fridge).
